| Green Plantains |
2 each. |
Cut plantain at each end. Slit down one side
with a paring knife. Insert knife at
top
of incision. Place at a 45º angle
inside
skin and pry open until skin pulls
from flesh.
Place plantains in a bowl with cold
water
and generous amount of salt.
Grate fine julienne strips of plantain on
mandolin slicer.
Fry in deep fat quickly until golden
in color.
Season with adobo spice immediately. |
