Bahamian Hash
I got this recipe from Laverne, one of our Bahamian cast members at Disney's Caribbean Beach Resort. She said she just had it for breakfast a couple of days ago! Laverne says the islanders just call it canned corned beef- no special name for it- but I thought I'd give credit where credit is due! In a large cast iron skillet, over medium high heat, add 1 Tbl oil
Cook for 2 to 4 minutes, until onion becomes transparent. Add 1 can Corned Beef Hash
Combine all ingredients and mix well. Let simmer, covered, for 5 to 6 minutes, stirring often. Serve with grits.
