Jellied Beet Salad

Ingredients Amount Method
Gelatin, lemon flavored
Water, boiling
1 1/2 lb.
2 qt.
Pour boiling water over gelatin. Stir until dissolved.
Beet juice
Champagne vinegar
Salt
Onion juice
1 qt.
1 cup
2 Tbl.
3 Tbl.
Add beet juice, vinegar, salt, and onion juice.
Chill
Horseradish
Celery, fine diced
Beets, diced
6 Tbl.
2 1/2 lb.
2 1/2 lb.
When mixture begins to set, add horseradish and vegetables.
Pour into pan. Refrigerate to congeal.

Chef's Tips:
Apple juice can be substituted for beet juice.
