Chicken Mole

Ingredients Method
1/2 cup olive oil, divided
5 whole chickens, cut into pieces
2 cups finely chopped onion
2 cups finely chopped green pepper
5 small garlic clove, minced
1 cup slivered almonds
1 cup raisins
1/4 cup toasted sesame seed
4 cups chicken broth
4 cups tomato sauce
6 ounces unsweetened chocolate
2 Tbl. Tabasco Sauce
2 teaspoon ground cinnamon
1 teaspoon ground allspice

Heat 1/4 cup oil in large skillet, and brown chicken pieces over medium-high heat. Remove and set aside. Add remaining oil to skillet, and sauté onion, pepper and garlic 3 to 5 minutes.

In food processor, finely grind almonds, raisins and sesame seeds to paste. Add mixture to vegetables, along with 1/2 cup of broth, tomato sauce, chocolate, TabascoŽ Sauce, cinnamon and allspice. Cook, stirring, until chocolate melts.

Return chicken to skillet, coating pieces well with sauce. If sauce is too thick, add a little more broth. Cover and simmer over low heat 20 to 30 minutes or until chicken is cooked through.

Chef's Tips:
Serve with Spanish rice and Sopapillas.
