Cinnamon Buns
If you've ever stayed at Disney's Caribbean Beach Resort, you most likely have had one of these Cinnamon Buns. It's hard to walk past the Cinnamon Bay Bakery in the morning without stopping for one! Yield 1 dozen Heat to 110 degrees 1 pint Milk Dissolve in warm milk and let sit for 5 minutes 2 ounces compressed yeast In an electric mixing bowl combine 3 ounces granulated sugar
Mix the above ingredients together along with the milk and yeast mixture, combine well. Add 2 1/2 pounds bread flour
Using a dough hook, knead the dough for 5 minutes. You may need to adjust the consistency of the dough by adding additional flour. The finished dough should be firm enough to roll out. Continue to knead the dough until it is smooth and elastic, about 3-4 more minutes. Cover the dough with a damp towel and let stand at room temperature until double in volume. Once the dough has proofed, lay out on a well floured surface. Roll out to 1/4 inch thickness into a rectangular form. Spread a generous portion of Cinnamon Schmeer over the entire surface of the dough. Roll up dough. Cut into equal portions and place in greased baking pan. Proof buns a second time by letting stand at room temperature until double in size. Bake at 375 degrees for 30 minutes or until golden brown and cooked throughout. Glaze Cinnamon Buns with White Icing Chef''s Tip- Don't throw away those scraps! Cut scrap pieces
into 1/2" thick strips. Combine two strips and twist together.
