Creole Shrimp

Ingredients Amount Method
Canola Oil 3 oz. Brown onion, garlic, and celery in oil over medium-high heat. Add shrimp and cook until 3/4 done. remove from heat and reserve.

Add flour and cook for 3-4 minutes, to incorporate any excess oil. Add shrimp stock and cook for 4-5 minutes.

Add tomatoes, vinegar, and sugar. Bring to a boil, reduce heat and add shrimp.
Onion, chopped 6 oz.
Celery, chopped 12 oz.
Chopped Garlic 1 oz.
Shrimp, peeled and deveined 5 lb.
Flour 3 Tbl.
Shrimp Stock 1 pint
Fresh Diced Tomatoes 1 1/2 qt.
Vinegar 6 Tbl.
Sugar 2 Tbl.
