Fruit Salsa

Yield: 1 quart
Ingredients Amount Method
Fresh Pineapple 1 lb. Dice pineapple, papaya, and mango into uniform 1/4 inch dice.

Chop chives.

Seed and mince jalapeno.

Combine all ingredients in mixing bowl. Toss lightly to coat all ingredients well.

Cover and set for 1 hour. Hold for service.
Papaya 1 each
Mango 1 each
Fresh Chives 2 Tbl.
Fresh Jalapeno 1 each
Jerk Spice 2 tsp.
Fresh Cilantro 2 Tbl.

Chef's Tips:
You can omit the jalapeno if you want to turn down the flame a bit.
