Lobster Cucumber Salad

Ingredients Amount Method
Lobster meat, picked clean
Lemon juice
Eggs, hard boiled, chopped
Cucumbers, sliced
Almonds, toasted, sliced
Mayonnaise
4 lbs.
1/3 cup
30 each
1 pt.
1 lb.
1 qt.
Combine all ingredients in mixing bowl and toss lightly.
Chill.

Chef's Tips:
Substitute French Dressing for mayonnaise, if desired.
