Orange Cranberry Sauce

Ingredients Amount Method
Cranberries
Sugar
Water
Orange zest
4 lbs.
4 lbs.
1 qt.
2 Tbl.
Wash cranberries. Discard any soft berries.
Add sugar, water and orange zest along with berries in stockpot. Cover and boil gently until the skins on berries burst.

Chef's Tips:
Sauce is best when made well in advance- at least 24 hours.
Cranberries can be pureed before adding sugar.
