Potato Doughnuts

Hot mashed potatoes
(mash with milk and butter)

Eggs, beaten

Baking Powder

To fry
In a large bowl, combine potatoes, sugar, buttermilk and eggs.

Stir in butter, baking soda, baking powder, nutmeg, salt and enough of the flour to form a soft dough. Turn onto a lightly floured surface; pat out to 3/4-inch thickness.

Cut with a 2-1/2-inch floured doughnut cutter. Fry the doughnuts at 350° for 2 minutes per side or until browned. Place on paper towels.

Chef's Tips:
Dust with powdered sugar or glaze with frosting.
