Red Eye Sauce


This is my version of the classic Southern Red Eye Gravy. Now before any of my health conscious friends wig-out when they
see the pork fat in there, keep in mind that you can substitute some olive oil and pieces of low fat sausage or smoked turkey
neck. Fry off the pieces in the oil to impart the flavors. This smoked flavor, along with the coffee, gives the sauce it's
authenticity.


In a large cast iron skillet, render the fat from

6 ounces pork trimmings

Discard the scraps and sauté off in the fat

1 small onion, chopped
1 bell pepper, chopped
1 rib celery, chopped

Season with

Salt and Pepper to taste

Cook well, stirring often. Let the vegetables get well caramelized.

Add to the pan

1/4 cup all purpose flour

Cook for an additional 3-4 minutes until the flour has totally absorbed the fat and takes on a brownish color.

Add

1 cup Coffee
1 cup Chicken Stock
1 teaspoon Tabasco Sauce
Fresh chopped herbs, preferably Oregano and Thyme

Simmer for 10 to 20 minutes.

Serve with Smoked Sausage, Sweet Potato Dumplings.



Tip- Be patient when cooking the vegetables. Cooking them well brings out the sugars, hence the term "caramelized". A true Cajun would never serve their vegetables "au dante"!
