Sweet Potato Dumplings


Bake off

3 Sweet Potatoes

Scoop out the flesh and let cool.
Mash and season with

Salt and Pepper to taste
1/2 teaspoon Tabasco sauce.

In a seperate bowl, mix together

3/4 cup Flour
1 teaspoon Baking Powder

Add to potato mixture along with

2 Eggs, beaten
2 ounces Sparkling Water

Scoop teaspoon size portions of batter into simmering water which has been seasoned with salt and pepper.

Dumplings will quickly float to the top. Cover and simmer for 10 minutes.

Serve with Red Eye Sauce and Smoked Sauage



Chef's Tip- Cook dumplings in chicken stock instead of water.
