Sweet Potato Dumplings
Bake off 3 Sweet Potatoes Scoop out the flesh and let cool.
Salt and Pepper to taste
In a seperate bowl, mix together 3/4 cup Flour
Add to potato mixture along with 2 Eggs, beaten
Scoop teaspoon size portions of batter into simmering water which has been seasoned with salt and pepper. Dumplings will quickly float to the top. Cover and simmer for 10 minutes. Serve with Red Eye Sauce
and Smoked Sauage
Chef's Tip- Cook dumplings in chicken stock instead of water. |
