Stamp and Go!

Legend has it that the natives of Jamaica jump off the bus at a stop, purchase a bag of these fritters, and hop back on- hence the term "Stamp and Go"!

Traditionally, these fritters are made with salt cod, but we've substituted shrimp.


Sift together

1 pound Flour
1 Tablespoon Baking Powder
2 Tablespoon Sugar
1 teaspoon Salt

Combine along with the following ingredients in a large mixing bowl. Mix well.

12 ounces Cooked, Chopped Shrimp
2 cloves Garlic, minced
1 each Scotch Bonnet Pepper, diced
1/4 cup Diced Onion
2 ounces diced Pimentos
2 Eggs
1 1/4 cups Cold Water
2 teaspoon Fresh Thyme
1/2 teaspoon Fresh Cracked Black Pepper

Heat frying oil to 375 degrees. Drop teaspoon size dolops of batter into oil and fry until cooked throughout, about 5 minutes. Drain on paper towels and serve hot mirrored with Papaya Glaze.


Chef's Tip- Substitute Hearts of Palm for the shrimp for a vegetarian fritter.
