Stamp and Go!
Legend has it that the natives of Jamaica jump off the bus at a stop, purchase a bag of these fritters, and hop back on- hence the term "Stamp and Go"! Traditionally, these fritters are made with salt cod, but we've substituted
shrimp.
Sift together 1 pound Flour
Combine along with the following ingredients in a large mixing bowl. Mix well. 12 ounces Cooked, Chopped Shrimp
Heat frying oil to 375 degrees. Drop teaspoon size dolops of batter
into oil and fry until cooked throughout, about 5 minutes. Drain on paper
towels and serve hot mirrored with Papaya Glaze.
Chef's Tip- Substitute Hearts of Palm for the shrimp for a vegetarian fritter. |
